Fried Rice



INGREDIENTS:

‏Basmati rice
5 cups
Cashew nuts
50gm
Carrot finely chopped
1 cup
Spring Onion finely chopped
1 cup
Onion finely chopped
1 cup
Beans finely chopped
1 cup
Cardamom
5
Bay leaves
2 big size
Cloves
6
Cinnamon
2 sticks
Sugar
4 tea spoon
Salt
As per taste
Ghee
1 table spoon
lemon
1/2
Refined Oil
As per requirement

PROCESS TO PREPARE

  •  Wash the basmati rice thoroughly in water and the let it soak in water for 15 minutes. 
  •  Now finely chop Carrot, Spring onion, Onion, bean and keep them aside.

     
  • Take a deep shaped pan, heat refined oil and one by one fry the chopped vegetables with little bit of salt(separately fry each vegetable).
  • Fry the Cashew nuts also and keep all the fried items on a plate.
  • After frying all the vegetables and Cashew nuts if  little bit oil is left don't use it.
  • Take a vessel add water(water should be double amount of rice)and soaked rice.
  • Cook rice for 16 to 18 minutes and after cooking for 10 minutes squeeze the half lemon in it so that rice will not be sticky. Then drain out the excess water from the rice.[note: rice should not be fully cooked or it will break while frying]

  • Now take a pan add 4 table spoon of refined oil in a pan, add bay leaves, cardamom, cloves and cinnamon. Cook the spices for a minute (as they impart flavor).
  • Now start adding cooked rice, fried vegetables and cashew nuts one by one and mix them well. 
  • Add sugar and salt then cook for 2 minutes.
  • When it is done add one tea spoon of ghee to enhance the flavor(it is optional).Your fried rice is ready to serve.
